Curried Broccoli Pilaf

1 tbsp oil
1 tsp ground coriander
1/4 tsp cumin
1 tsp turmeric
1/4 tsp cinnamon
2 whole bay leaves
1 clove garlic (optional)
1/2 of a small onion (1/2 cup chopped)
1 bunch broccoli OR 1 small head cauliflower, chopped
3 cups cooked brown rice
1 small lemon
1 tsp salt (to taste)

Heat the oil in a large skillet. Add the garlic, onion, and spices. Cook until the onion is soft and brown.

Add the chopped broccoli and cook, stirring, for 5 minutes. Add 1/3 cup water, cover and steam the mixture for 5 minutes or until vegetables are tender.

Stir in the rice and cook until hot. Add the lemon juice and salt to taste. Mix well.

Serves 4.
