Medium sized Yukon Gold potatoes
Vegetable oil
Salt to taste
Preheat oven to 425F. Wash potatoes, leaving skins on. Cut them length-wise in half, then cut each half into 3 or 4 length-wise wedges.
Coat the potatoes in oil, using your hands.
Bake for up to 40 minutes, turning the potatoes half-way through the cooking time.
When the fries are golden and the skins are crisp, sprinkle them with salt and serve immediately.
