Roasted Potato Hash

1 lb. russet or Yukon Gold potatoes
1 medium onion
1/4 cup combined safflower and olive oil
coarse-ground salt and pepper
1 red pepper
fresh herbs to taste

Preheat oven to 500 degrees F.

Cut potatoes in small dice (3/4″). Cut onions in medium dice. Combine potatoes, onion, oil, and salt and pepper. Spread one layer deep on a rimmed baking sheet. Bake 10 minutes.

Stir potato mixture. Add diced red pepper and bake an additional 13-15 minutes. Sprinkle with chopped herbs if desired for the final minute or two of baking.

Serve with eggs, fried over easy!
