olive oil
1 medium onion, diced (1 cup)
1 cup diced celery
diced cabbage
garlic paste
2 medium yellow potatoes, diced
2 large carrots, diced
1 tsp salt
4 cups vegetable broth
2 cups water
herbs: sage, marjoram, thyme
pepper to taste
optional – kale, chopped
5 quart soup pot.
Saute’ onion, cabbage and garlic in olive oil. Add celery and continue to cook until the onions are soft.
Add all the other ingredients, except the optional kale. Bring to a boil; then simmer for 30 minutes.
If you are using kale, add it during the last 5 minutes of cooking. Adjust seasonings.
Makes 3 quarts.
