4 tsp yeast
1 1/4 tsp table salt or 2 1/4 tsp kosher salt
2 tbsp sugar
1/2 cup rolled oats
3 1/2 cups flour (use half whole wheat)
2 1/4 cups hot water (120°)
Put dry ingredients in a large bowl. Add the water. Mix well, then beat for 2 minutes. The dough will be very sticky.
Let the dough rise, then stir it down. Do this two or three times. (Timing is not critical.) After the last time, liberally grease some muffin tins with butter. Heat oven to 375°. Fill muffin tins with dough, and let rise 5 minutes, or up to 15 minutes. Place in oven on middle rack for 20 – 25 minutes, or until golden brown. They should read at least 208° on an instant-read thermometer. Remove from pan immediately and either serve hot, or cool on a rack.

2022 Try with 100% whole wheat flour next time (plus the oats)
