Yeast Waffles

1/2 cup warm water
2 tsp yeast
1 tsp sugar
2 cups milk
1 stick (4 ounces) butter
1 tsp salt
2 cups (280 grams) whole wheat flour
2 eggs
1/4 tsp baking soda

Mix the yeast, sugar, and warm water and let it sit until foamy.

Melt the butter in the milk, bringing the mixture to 115°.

Add the milk and butter to the yeast; stir in the salt and the flour, using a large whisk.

Let this mixture sit in a warm place overnight (12 hours is ideal).

Before baking the waffles, stir in the beaten eggs and baking soda.

Cook the waffles until crispy on the outside; creamy on the inside.

Serves 5 – 6.
